McCance and Widdowson's THE COMPOSITION OF FOODS http://www.amazon.co.uk/McCance-Widdowsons-Composition-Foods-Summary/dp/0854044280 My wife and I bought it on the reccomendation of her nutritionist. It's not cheap, but it is the most complete reference we have found so far. Great for juggling a low potassium, diabetic etc. diet. Hope this helps, Andy
