It was everytime I used to eat pork, or anything containing any pork deriative ( pork gelatine etc). My throat and mouth would swell. As soon as I left pork alone I was fine. My mum suffers with the same allergy. Allergenists don't always check for pork allergies, as it's not always a recognised allergy. Just keep an eye on what you eat and see if it happens again. Could be an unidentified allergy; could also be bacterial infection, thyroid failure or vitamin deficiency.
