My idea of slow food is something like oxtail, which gets better and
better the longer you braise it. Or roast beef, cooked slowly on a low
heat.

The authors of the second link seem to know even less about cars than
I do - my car is at its most economical while doing a steady 45mph in
5th gear on the flat. Lowering speed limits just for the sake of it
actually raises fuel consumption and adds to pollution etc.

Lamb stew is also much better when cooked for a longer time at a lower heat.
I tend to prefer my beef on the rare rather than well done side.

I know (next to)nothing about cars but do know that below a certain
speed it's not economical re mpg.
Also i think a journey with more stops and starts is less economical (or
am i wrong there?).
