From: Willow Herself on 4 Jan 2008 23:41 Red kidney bean soup 2 cans red kidney beans, drained and rinsed 1 cup chick peas, drained and rinsed 3/4 cup chicken broth 3/4 cup Double-Roasted Salsa (from TJ) 1/2 cup onion, chopped finely 1 cup chicken broth 2/3 cup frozen corn kernels 2 tsp canola oil 1/2 tsp cumin 1/2 tsp chili powder (I used indian chili powder and used a little less) Salt and pepper to taste. 1. Process 1 can of beans, the chickpeas, and the 3/4 cup of broth until you get the consistency you want (I like not quite chunky, but not liquid either...)combine with the salsa, set aside. 2. In a saucepan, heat up the oil, and fry the onions until slightly brown. 3. Add the cup of broth, the corn, the remaining can of beans, and the bean/chickpea mixture.
