However, if you don't know how to cook your red rice, or you are not used to eating red rice you may not like them. The texture of cooked red rice is not as soft as cooked long grain or white rice imported in this country from Thailand. But if they are cooked right, you will find them very palatable. Red rice is also imported from Thailand. The current retail price of Red rice at Oriental stores is still quite high compared to brown or white rice. I know a friend who must eat rice. She is a diabetic for over 40 years. Anytime she eats rice for lunch or dinner she must get herself extra insulin shots or otherwise she feels sick or dizzy. It was not uncommon for her blood sugar to rise dramatically to 350 or 400 mg/dl after dinner. But now she says she feels normal when she eats red rice for lunch and dinner. Her blood sugar rarely shot up over 140 mg/dl. Remember even when you eat red rice you must watch what you eat. How do you cook them? First soak them overnight with water. The following day cook the rice in a rice cooker adding a little more water to your rice cooker than you normally would when you are cooking regular white rice. Enjoy your red rice.

Until I know more, I am reluctant to eat red yeast rice because I have had an immediate bad reaction to several statins. I am not aware there is red yeast rice in red rice. My understanding is that red yeast rice is yeast (Monascus purpureum) grown on rice. Whether there is or there is not red yeast on red rice (also known as cargo rice) I don't know. If there is any, they should become very diluted if you soak the "cargo rice" in water overnight, should it not? I myself have recently started eating red rice and I like it. Incidentally, the wife of my neighbour told me that her husband can eat only red rice, because he has intolerance problem to white rice.
