Your start point is irrelevant. Choose what suits you. I use the end of the meal, because that's easy. I put down my fork or spoon and click on my countdown timer on my watch, which is pre-set to 55 minutes. Then I test when the timer goes off. If that test is good, that's it. If not, I hit the count-down again and test again at the two-hour point. That's because I know my peak is at one hour after I finish. That works for me, because the time taken to eat a meal can vary. If you do some extra testing at, say, 30 minute intervals after a few meals you will find when your own personal peak occurs most consistently. Note that timing and use it after that.
