From: tomb on 2 Aug 2005 10:50 I have been on a GF diet for 3.5 years now. I have noticed from time to time that I feel minor coeliac symptoms. I am very careful not to eat anything which might concievably contain gluten, so this was worrying. I realised recently that these episodes occurred after I had eaten poultry, usually chicken, sometimes turkey. I know alot of poultry are fed a grain diet but I had assumed that the gluten would have been metabolised by the birds and that I couldn't pick up gluten from poultry meat. Or am I barking up the wrong tree completely here? Comments anyone? Tom.

By that I mean, there's no "injected" or marinated enhancements (WalMart is well known for that with their meat). The enhancements sometimes contain gluten and/or MSG. From: Karen on 3 Aug 2005 00:10 Tom, I haven't been hit yet by gluten in chicken I've bought at the grocery store. But I do know the self-basting birds are not always GF but most of the raw chicken sold in the grocery store is injected with broth and salt. But I still check the package, email, call, etc. I've been nailed by grilled chicken a couple of times in restaurants, once in an airport, once in a regular sit-down kind of place -- both supposedly unseasoned. I now order unseasoned beef, pork or salmon if I'm think it's iffy (grilled salmon is one dish they don't seem to have figured out how to "glutenize" yet). I haven't run into a problem with this strategy yet but I still make sure there's no marinade or seasonings when it's served to me. I think it may be more of an issue in restaurant food where they worry about the meat drying out before it's served.
