There are gluten free breadcrumbs out there. And yes, you can use rice flour or cornmeal. For fried chicken, I use GF cornflakes run through the blender one pulse. -- }:-) Christopher Jahn {:-( http://soflatheatre.blogspot.com/ A cat will assume the shape of its container.

When I want a coating that doesn't add much of it's own flavour I use corn flour as opposed to corn meal. Beth

I don't do fish but for chicken nuggets I've used GF breadcrumbs or corn meal. Husband used to do catfish by dipping in mustard and then cornmeal.

I use yellow corn meal and mix in dried onions, Garlic powder, Old bay seasoning and armesan cheese, You can add pepper curry powder or dried herbs.... heat a small amunt of oil in a pan then cook untill coating is crusty turning once....Add oil as needed...... .....Enjoy.......
