A utility bench is a bench without uprights; a portable bench. The demo guy is stepping on a utility bench. http://www.exrx.net/WeightExercises/Quadriceps/BBStepUp.html Don't do like that guy, keep your head up. Look ahead or up, not down. A box, say a wooden one for box squats is better than a utility bench since the surface is more solid.

We have a low wooden box that I could place on the edge of our lifting platform, that would set me up about the same as a utility bench.
